Salmon Power Bowl

Ingredients:

  1. 3-4 oz boneless Salmon (garlic powder, salt, pepper, everything but the bagel seasoning, olive oil, and mayo)

  2. 1/4 cup cooked tri colored quinoa (got mine from Trader Joes)

  3. 1 boiled egg

  4. Handful of chickpeas

  5. 1/2 avocado

  6. romaine lettuce

  7. pickled beets (also got this from Trader Joes)

  8. Carrots

  9. Feta

  10. Tzatziki sauce

  11. Dressing: 1/2 lemon, 1 tablespoon olive oil, Greek seasoning

Instructions:

  1. Preheat air fryer ay 390 for 4 minutes

  2. Lightly cover all sides of salmon in olive oil and then mayo (I used the back of a spoon to lightly cover in mayo)

  3. Season with salt, pepper, garlic powder, and everything but the bagel seasoning

  4. Cook in air fryer at 390 for 7 minutes

  5. Assemble all your ingredients in a bowl and drizzle dressing over the top.

  6. Enjoy!
