For the salad:
1 cup of finely chopped Kale
1 cup of Arugula
1/4 cup of cranberries
1 tablespoon hemp hearts
1 tablespoon feta
1/2 Avocado
1/3 cup chopped pistachios
1 chopped mini seedless cucumber
1/4 cup roasted cubed sweet potatoes
For the dressing:
1/2 squeezed lemon
3 tablespoon olive oil
1 teaspoon whole grain Dijon Mustard
1 teaspoon Honey
Salt and Pepper to Taste
Instructions:
Add all dressing ingredients into bottom of salad bowl.
Add in Kale and Arugula and massage into dressing until completely coated.
Add the rest of the ingredients to salad bowl, mix and enjoy.
