Salmon Tacos with Mango Salsa

Ingredients:

  • 2-3 Salmon Filets (usually between 5-7 oz. filets)

  • Seasoning for the Salmon (Chili Powder, Paprika, Cumin, garlic salt)

  • 1 mango

  • 1/4 red onion

  • 1 tbsp. Greek yogurt (plain)

  • 2 tbsp. cilantro (chopped finely)

  • Cabbage slaw mix (got mine from Trader Joes)

  • 2 Limes

  • 1 avocado

  • Tortillas (whole wheat , corn, or flour- I chose whole wheat)

  • Salt and pepper to taste

Instructions:

  • Prep the cabbage slaw by adding Greek yogurt, one lime, salt, and pepper. Put in the refrigerator so the juices can soak into the cabbage.

  • Prep the mango salsa by slicing the mango and onion into tiny cubes. Chop up the cilantro and squeeze 1 lime into the salsa. Add salt and pepper to taste. Put in the refrigerator so the juices can soak as well.

  • Turn on the air fryer and set to 390 degrees.

  • Base the salmon lightly with olive oil and then add the seasonings (don't be afraid to coat it well with spices so you get a good flavor!)

  • Air fry the Salmon for 9-10 minutes at 390 degrees.

  • While the salmon is cooking, heat up a pan with a little bit of oil. Place the tortillas in the pan until they get a nice char on them but make sure they are still soft enough to fold!

  • Assemble your tacos- Salmon, slaw, mango, salsa, and avocado and enjoy! :)
