Ingredients:
For Filling:
1b ground chicken
1 cup shredded carrots
1/4 cup chopped cashews
1/2 cup diced mushrooms (optional)
1/4 tsp corn starch
Sauce for Filling:
1 tbsp Coconut Aminos (From Trader Joe's)
1 tbsp Soy sauce
1 tsp Seasme oil
1 tsp minced garlic
1/2 tsp ginger
1 tsp creamy peanut butter
1/2 tsp siracha
Lettuce wraps:
I used romaine but you can also use butter lettuce
Toppings:
Seasme seeds
Avocado
Cilantro
Instructions:
Put all filling sauce ingredients in a small bowl and mix thoroughly.
Cook ground chicken in a large pan until almost fully cooked.
Add shredded carrots, cashews, mushrooms, and sauce and cook for another 5-6 minutes.
Add cornstarch and stir together so the rest of the sauce coats the filling nicely.
Add the filling to your lettuce wraps, add toppings and enjoy!
