Thai Chicken Lettuce Wraps

Ingredients:


For Filling:

  • 1b ground chicken

  • 1 cup shredded carrots

  • 1/4 cup chopped cashews

  • 1/2 cup diced mushrooms (optional)

  • 1/4 tsp corn starch

Sauce for Filling:

  • 1 tbsp Coconut Aminos (From Trader Joe's)

  • 1 tbsp Soy sauce

  • 1 tsp Seasme oil

  • 1 tsp minced garlic

  • 1/2 tsp ginger

  • 1 tsp creamy peanut butter

  • 1/2 tsp siracha

Lettuce wraps:

  • I used romaine but you can also use butter lettuce

Toppings:

  • Seasme seeds

  • Avocado

  • Cilantro

Instructions:

  1. Put all filling sauce ingredients in a small bowl and mix thoroughly.

  2. Cook ground chicken in a large pan until almost fully cooked.

  3. Add shredded carrots, cashews, mushrooms, and sauce and cook for another 5-6 minutes.

  4. Add cornstarch and stir together so the rest of the sauce coats the filling nicely.

  5. Add the filling to your lettuce wraps, add toppings and enjoy!
